Buckwheat Waffle with Pomegranate Molasses Mince

If you fancy a waffle with a bit of twist this weekend, this tangy, sweet minced beef recipe could hit the spot.

Inspired by Middle Eastern flavours, this dish is full of spices and garlic with a lip licking sauce.

It’s delicious on a light, nutty savoury buckwheat waffle with a fresh salad on the side and is a real favourite with all the family.

Don’t be put off by the long ingredient list. This is really easy to make and is ready in under 25 minutes.

Method

Serves 4

Preparation time: 15 minutes Cooking time: 10 minutes

You will need a waffle iron.

The waffle mixture will make 4-6 waffles, depending on your waffle iron.

Prepare your chicken stock.

In a large, heavy based frying pan, gently heat the olive oil and soften the onions for 4 minutes, add the garlic and cook for another minute.

Add the mince to the pan. Stir the mince, breaking up any lumps with a wooden spoon until it is browned. Add the spices, pomegranate molasses, honey, tomato puree and chicken stock.

Stir until it is all combined and simmer gently for 10 minutes until the stock has reduced to a thick gravy. When it is ready, turn off the heat and cover with a lid until ready to use.

Meanwhile, make the waffle batter. Mix together the dry ingredients in a bowl. In a jug, mix the butter, milk and eggs.

Pour the milk, egg and butter mixture into the dry ingredients, stirring thoroughly until it is completely combined.

Leave the waffle batter to stand for 5 minutes while you heat your waffle iron.

Prepare the salad ingredients and mix together in a large bowl. Mix up the oil and vinegar to make a dressing. Dress the salad just before serving

When the waffle iron is ready, ladle in the mixture and cook until you have sufficient waffles.

Heat some vegetable oil in a frying pan and fry your eggs. Leave the eggs to drain on some kitchen paper.

To serve, divide the waffles, minced beef and salad between your plates. Sprinkle the parsley over the mince, top with a fried egg and dust with a sprinkling of smoked paprika.

1 tbsp olive oil

500g lean minced beef

3 medium red onions chopped

4 garlic cloves finely chopped

1 tbsp ground cumin

1 tsp ground cinnamon

1 tsp smoked paprika (plus extra for dusting)

4 tbsp pomegranate molasses

1 tbsp runny honey

1 tbsp tomato puree

200ml chicken stock

Salt for seasoning

1 tbsp flat leaf parsley

180g buckwheat flour

1tsp caster sugar

1 tsp salt

1 tbsp baking powder

300ml semi-skimmed milk

80g unsalted butter melted

2 eggs lightly beaten

Salad

1 pack of pea shoots

16 baby plum tomatoes halved

1/3 cucumber halved, sliced and deseeded

4 radishes sliced

1 tbsp white wine vinegar

3 tsp olive oil

Salt and freshly ground black pepper for seasoning
