Healthy Berry and Almond Breakfast Bowl

Start your day in the right way with this breakfast bowl. It’s is a great alternative to processed cereals and it’s very easy to make. I find using toasted almonds instead of granola both cuts sugar and helps keep me feeling full until lunchtime without losing any of the flavour.

Protein from Greek yoghurt, over one of your five a day from the mix of berries and antioxidants from almonds are just some of the benefits from eating this quick to make breakfast.

If you want to make this a vegan treat, just use a higher protein plant based alternative such as Apro Go On in place of the Greek yoghurt.

Method

Prep time: 0 mins Cook time: 10 mins

Place the almonds in a dry frying pan and heat gently for around 5 mins, moving around from time to time. Keep an eye on them as they will catch and burn easily.

As soon as the almonds are light brown, tip them out from the pan onto a board so they stop cooking.

Leave the almonds to cool while you build the rest of your breakfast bowl.

Put the Greek yoghurt in the bowl first, then arrange the fruit on top. Finally, sprinkle over the almonds.

If you want to take this to work, you can assemble it the night before. Just keep the almonds separate from the yoghurt and fruit until you are ready to eat it.

Look out for handy tupperware tubs with separate lid sections and built in spoons which make this super easy.

150g Greek yoghurt (not Greek style) or plant based alternative

20g flaked almonds

40g raspberries

25g blueberries

1/2 kiwi fruit, peeled and cut into small pieces
