Halloumi Topped Turkey, Courgette and Parmesan Burger

Burgers are made for casual Friday nights in whether it’s just the two of you or a more social affair.

Update your burger style with this one for a tasty new take on an old school favourite.

This burger is juicy with courgette and rich with parmesan cheese with a hint of toasted fennel seeds. Topped with halloumi cheese, you will really feel as though you are indulging yourselves.

Method

Serves 4

Prep time: 5 mins Cooking time: 20 mins

Lightly toast the fennel seeds in a dry pan. Grind the seeds to a powder in a pestle and mortar and tip it into a large bowl with all the other burger ingredients. Season with salt and pepper.

Use your hand to mix the ingredients together until they are really well combined. Tip the mix out onto a board and shape it into a big round ball. Use a large knife to cut into four pieces. Take each of pieces and form into a burger shape.

Heat the grill and cook the burgers for approximately 20 minutes, turning half way through. Make sure they are cooked all the way through with no pink bits left.

While the burgers are cooking, slice the tomatoes and toast the burger buns. Heat a griddle or frying pan and when it is hot, fry the halloumi slices until they are brown on both sides. Don’t add any oil to the pan, the fat from the cheese will be enough.

When the burgers are ready, put a spoonful of mayonnaise on each of the bottom halves of the buns and add the tomato slices. Place the turkey burger onto the tomato and top with the salad leaves, halloumi slices and the other half of the burger bun.

Serve immediately, perhaps with a few tortilla chips and a cold beer.

1 slice wholemeal bread

500g turkey thigh mince

1tsp fennel seeds toasted and ground

Zest of 1 lemon

30g parmesan cheese

150g courgette grated

1 medium egg

4 burger buns

4 tbsp mayonnaise

1/2 red onion sliced

Spinach, rocket and watercress salad mix

170g Halloumi sliced into 4 slices
